Using soaked cashews as the base for this dressing is not only nutritious and flavourful, it creates the creamy consistency you expect from ranch dressing. You will never want to buy ranch off the supermarket shelf again. Be sure to make a batch for your next pot luck.
Makes about 1 cup
Ingredients
¾ cup cashews, soaked in 1½ cups water for 4–24 hours
½–¾ cup fresh chives, chopped + ¼ cup
1–2 garlic cloves, crushed
2–3 tablespoons apple cider vinegar
Juice of half a lemon or 1 lime
2 pitted, coarsely chopped dates
1 teaspoon soy sauce
Pinch of sea salt
½ cup chopped fresh dill
Directions:
Blitz all ingredients except for dill in a blender, including half the liquid from soaked cashews (add additional water if necessary), until desired creaminess is achieved. Mix in dill and remaining chives.
