Have the Lunch Time Blah’s? Real Food Revival to the Rescue
1 19 oz. can of Garbanzo Beans
2 medium ripe tomatoes chopped into medium chunks
1 small red onion cut into ribbons or half-moon slices
1 green pepper, coarsely chopped
½ Cup fresh parsley, chopped
2 - 4 tbsp. feta cheese
1-2 tbsp. olive oil
Juice of ½ a lemon (more if needed)
1-2 tsp Hungarian Paprika
Fresh black pepper
Combine beans, tomatoes, onion and green pepper.
In a separate bowl, combine ingredients for dressing.
Toss dressing in with salad ingredients.
Serve in a bowl and top with feta and parsley.
