8 large finger purple potatoes, washed and cut into 2” chunks or use regular potatoes
1 medium white or red onion, thinly sliced
2 oz. goat cheese
¼ cup fresh chopped parsley
black pepper to taste
Cook potatoes in boiling water for 6-8 minutes, until potatoes can slightly pierced with a fork, then drain.
Combine potatoes, goat cheese, onions, parsley and black pepper in large bowl. Mix until goat cheese starts to melt and potatoes are well coated.
Serve cold or warm.
