Serves 4


  • 8 large finger purple potatoes, washed and cut into 2” chunks or use regular potatoes

  • 1 medium white or red onion, thinly sliced

  • 2 oz. goat cheese

  • ¼ cup fresh chopped parsley

  • black pepper to taste


  • Cook potatoes in boiling water for 6-8 minutes, until potatoes can slightly pierced with a fork, then drain.

  • Combine potatoes, goat cheese, onions, parsley and black pepper in large bowl. Mix until goat cheese starts to melt and potatoes are well coated.

  • Serve cold or warm.
