Dust off the BBQ if you haven't already for these scrumptious black bean burgers that will have your family saying; "Can we have this tomorrow?"
1 (16 ounces) can black beans, drained and rinsed
1 jalapeno pepper, chopped
1 medium onion, chopped
2-3 cloves garlic, peeled
1 large egg
1 tablespoon cumin
1 teaspoon chili paste or 1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 cup fine or medium cornmeal (you can substitute ground up oats or bread crumbs)
In a medium bowl, mash beans with a fork until mushy.
Combine jalapeno pepper, onion, and garlic. Then stir into beans.
In a separate bowl, stir together egg, spices, and chili paste
Stir the egg mixture into the mashed beans. Mix in cornmeal until the mixture is sticky and holds together.
Divide into four patties.
Serve alongside your favorite veggies
