Roasted Beet Salad
I just love beets and roasted is the way to go. This combination of roasted beets, walnuts and goat cheese is quite common; I like to add a few ribbon of fresh mint as well. Each mouthful is a blend of texture and taste. This makes a perfect starter and the best part is it’s so simple. Check out this video how to oven-roast beets.
2 small roasted beets, sliced
1 ounce goat cheese
1 ounce toasted walnuts
3–4 sprigs fresh mint, leaves stripped and cut into ribbons
Fresh cracked black pepper
Light drizzle of extra virgin olive oil (optional)
Layer sliced beets on a plate, add goat cheese, walnuts, mint, olive oil and top with some fresh cracked black pepper.
