This light Mediterranean Caesar vinaigrette is one on my favourites. If anchovies aren’t your thing, you can omit. However, they will give you a burst of flavour, not to mention the beneficial omega-3’s. Let me know how it turns out.
Mediterranean Caesar Vinaigrette
Serves 2–3
1–2 anchovy fillets, very finely minced
Juice of a medium lemon
1 clove garlic, finely minced or 2 cloves of roasted garlic
1 tablespoon Dijon mustard
1–2 tablespoons cold pressed olive oil
1–2 teaspoon balsamic vinegar
1 teaspoon dried oregano
Pinch of black pepper to taste
Directions:
Using the back of a fork, combine anchovy fillets, lemon juice and garlic. Allow to sit for about a minute or two until the anchovies begin soften and slightly liquefy. Add remaining ingredients, toss in with your greens and enjoy.
