Mediterranean Caesar Vinaigrette

This light Mediterranean Caesar vinaigrette is one on my favourites. If anchovies aren’t your thing, you can omit. However, they will give you a burst of flavour, not to mention the beneficial omega-3’s. Let me know how it turns out.



Mediterranean Caesar Vinaigrette

Serves 2–3

  • 1–2 anchovy fillets, very finely minced

  • Juice of a medium lemon

  • 1 clove garlic, finely minced or 2 cloves of roasted garlic

  • 1 tablespoon Dijon mustard

  • 1–2 tablespoons cold pressed olive oil

  • 1–2 teaspoon balsamic vinegar

  • 1 teaspoon dried oregano

  • Pinch of black pepper to taste

Directions:

Using the back of a fork, combine anchovy fillets, lemon juice and garlic. Allow to sit for about a minute or two until the anchovies begin soften and slightly liquefy. Add remaining ingredients, toss in with your greens and enjoy.

This is one of my favourite go to salad dressings. Very easy to make and very tasty. I have also used it as a marinade for my chicken kababs on the BBQ,
