Mixed Berry & Banana Chia Oat Breakfast Pudding

Serves 2


  • 1 Banana

  • ¾ to 1 cup mixed frozen berries of choice (I like blueberries, cranberries and cherries)

  • 2/3 cup rolled oats

  • 2 Ounce walnuts or use 1 heaping tablespoon natural nut butter

  • 4-5 teaspoons whole chia seeds

  • 2-3 teaspoons ground flax

  • ½ teaspoon cinnamon

  • ¼ to ½ teaspoon pure vanilla extract

  • Pinch of salt

  • ½ to 1 cup milk or dairy alternative such as unsweetened almond or oat milk

  • Additional walnuts and fresh or frozen berries for garnish before serving


  1. Pulse using blender to combine all ingredients until you have desired texture. I prefer to keep it somewhat chunky

  2. Pour mixture into wide mouth mason jar or Tupperware container

  3. Refrigerate over night

  4. Garnish with additional walnuts and fruit of choice
