Roasted Peaches

Who needs confections when you can enjoy tree-ripened peaches that drip down your chin?


This is one of many fruit-based pleasures in my repertoire. These succulently roasted peaches can be used as a topping with cooked breakfast cereal such as oats, used in a yogurt based dessert or taste great all by themselves. This dish is so MODA-licious you’ll wish peaches were in season year-round! Enjoy...


Serves 4-6


Ingredients

  • 4-6 Fresh peaches, halved with pit removed

  • juice and rind of one lemon

  • 2-3 TBSP rolled oats

  • 1 tsp cinnamon

  • Fresh grated nutmeg to taste

  • Non-stick cooking spray or 1 tsp. butter

Directions:

  1. Wash and prepare peaches by cutting in half & removing pit.

  2. Place peaches in Pyrex dish with cut side facing up.

  3. Sprinkle peaches with lemon rind and juice.

  4. Dust with cinnamon, nutmeg and top with rolled oats.

  5. Roast or broil peaches on upper rack with temperature set at low broil or 400F.

  6. Roast for 10-15 minutes until peaches start to turn slightly brown and caramelize. Allow to cool for 15 – 20 minutes.
