
Mixed Berry & Banana Chia Oat Breakfast Pudding
Serves 2 Ingredients 1 Banana ¾ to 1 cup mixed frozen berries of choice (I like blueberries, cranberries and cherries) 2/3 cup rolled oats 2 Ounce walnuts or use 1 heaping tablespoon natural nut butter 4-5 teaspoons whole chia seeds 2-3 teaspoons ground flax ½ teaspoon cinnamon ¼ to ½ teaspoon pure vanilla extract Pinch of salt ½ to 1 cup milk or dairy alternative such as unsweetened almond or oat milk Additional walnuts and fresh or frozen berries for garnish before serving
